Slice 'n Dice - The Master Chef's Best Cutting Utensils

Master Chefs know one thing that few consumers do: anything that can be done with a commercial food processor can be done with a knife. Here's a few of the general use knives you should be looking at purchasing, if you don't have them yet:

Knife Block

* 8 to 10" chef's knife or Asian style veggie knife like a Santoku: All around, all purpose knife. Use this for everything from chopping onions to cutting meat.

* A straight 3" paring knife: A utility knife. Useful for tasks like cleaning the meat out of things such as clam shells.

* A serrated bread knife or electric knife: This will make cutting certain foods such as bread MUCH easier.

Eventually, once you gain experience with the basic knives, you can expand your collection with the following:

* Kitchen shears: These should be food safe.

* Semiflexible boning knife: A specialized utility knife. Eventually you can get a more specialized, long 6 to 8 " filleting knife for cleaning fish or calamari.

* 4 to 5" utility knife: A utility knife of these dimensions will find usage for many situations, and complements the 3" paring knife.

* Long slice knife: either smooth or granton edge. Each edge will cut certain foods faster and cleaner.

* Pizza cutter: One of the best kinds is a 3 piece wheel that can be disassembled for easy cleaning.

* Y shaped peelers: These are for shaving chocolate curls from blocks, or frozen butter from blocks of butter, or for cutting into flour or pastry dough). They can also be used for removing the plastic sleeve from wine bottle neck.

* Straight and harp shaped peeler: Excellent for cutting perfect potato chips, superior to anything electric food processors could do.

This knife tray conveniently houses all kitchen cutlery in a drawer without occupying valuable counter space. Made of hardwood, the tray is a slim 7-1/2 inches wide and 1-1/2 inches high and fits within a drawer that is 16-3/4 inches deep. The 14 knife slots include space for eight steak knives or shorter knives with up to a 5-inch blade and six longer knives with up to a 10-inch blade or, alternately, a sharpening steel. The slots intersperse the longer knives between the shorter in what Wusthof refers to as a "wave" pattern, which makes knife handles easier to grasp and remove.
