Learning Karate - Shuto Uke Kokutsu Dachi (Knife Hand Block Back Stance) Part 1

Shuto uke in kokutsu dachi or knife hand block in back stance, is probably one of the most awkward karate techniques, in shotokan karate. Many shotokan karate dojo do not practice this technique until the karateka has been attending karate lessons for several months. Even if you are still attending karate lessons for beginners, the sooner you understand the basic fundamentals of this karate move, the faster you will progress.

In this article we will cover the arm movements associated with shuto uke.

Knife Block

The blocking arm positions for the three shotokan karate basic mid level blocks (soto uke, uchi uke, shuto uke), are almost the identical.

1. The blocking arms elbow is approximately a fist, to a fist and a half distance from the body.

2. There should be a 90 degree bend at the blocking arms elbow.

3. The finger tips of the blocking hand are approximately shoulder height, shoulders down and relaxed.

4. The blocking hand should be at a slight angle, so do not have the palm facing completely down, or the edge of the hand (shuto), facing down. The shuto is somewhere in between. A good gauge is having the back of the bent thumb, on the blocking shuto, facing directly at you, at completion of the block.

5. The hikite (pulling arm), is placed on the stomach, so that the edge of the hand is on the belly button, finger tips approximately level with the forward side of the body. Fingers and wrist straight, whilst keeping the thumb bent and tight. Feel like you are pulling the tip of the thumb, to the the base of the thumb, on the inside of the hand. The whole length of the hikite arm, from elbo to finger tips, should be parallel with the floor.

So now we have the arm positions for shuto uke. Keep practicing the finished arm positions for shuto uke. Feel the muscles working when you kime or tighten the muscles. Practice this on both sides.

In part two, we will cover stepping forward knife hand block in back stance. Always take things slowly at first, especially if you are trying to learn karate at home. Understand every little detail and try and get your karate sensei to check it out, before you speed up.

Learning Karate - Shuto Uke Kokutsu Dachi (Knife Hand Block Back Stance) Part 2

In the first article we described the arm positions for shuto uke. In this article we are going to explain stepping forward shuto uke (knife hand block) in kokutsu dachi (back stance).

Knife Block

Although this is classed as a basic karate technique, most people find this difficult and uncomfortable. So we are going to break this step down, into small sections.

Knife Block

Get into the habit of breaking new karate moves down, they then become much easier to understand the small detail.

Starting with the left leg in front.

1. Start the step by driving the front (left) knee forward. Imagine someone has a hold of your left wrist and they sharply pull you forward, so really stretch the left arm forward, hand open, fingers and wrist straight.

2. At the same time as you perform number 1. Lift the right arm straight up from the stomach to the left shoulder. Keep the forearm close to the body as you lift the arm and keep the elbow in the center of the chest. When the right hand reaches the left shoulder (palm facing the neck), the hand is open, fingers and wrist straight.

3. The front knee and two arm movements above, should be done at exactly the same time. As the above moves are executed, immediately start to step with the right leg, pushing the right side of the body forward.

4. Keep the same height throughout the step, knees come close together at the half way point, body square and both feet facing forward.

5. As you start the second half of the step, from the half way point, keep your body weight over your back (left) leg.

6. Still keep both feet facing forward as you move through the here quarter stage of the step. At this point, start to block with the right arm and pull the left hikite arm back.

7. As the hikite arm pulls back, keep the palm facing down and as the blocking arm goes out, keep the palm facing towards you and the elbow down. The back of the blocking forearm, slides down the inside of the hikite arm.

8. As you land in the full kokutsu dachi (back stance), sharply pivot on the left (back) foot, turning your left foot and knee out to the side.

9. As you complete the arm movements, rotate both forearms sharply, so the palm of the hikite (left) arm, faces up and the palm of the blocking arm, faces to the inside and down slightly.

10. Both numbers 8 and 9, should be performed at exactly the same time.

11. Breath in on the preparation and out on the execution of the block.

Most karateka start practicing this particular karate technique, a few moths into their karate training. Of all the basic karate moves, this is one of the hardest to master. Whether you are attending a karate dojo, or learning karate at home, I recommend you break the techniques down and repeat again and again. Start slowly and gradually build up to maximum speed.

Most knife experts will tell you to never buy a knife set. I'm here to say that a proper knife set is a cook's best friend and kitchen's best asset. Here's how to decide if a knife block is right for you, find the perfect knife set, and maintain it for a lifetime.

Who is a knife set really for?

The sort of person who really gets the best out of a knife set is someone who loves to prepare nice meals from fresh ingredients, who has a kitchen that they adore and who really basks in how homey and comfortable or sleek and stylish it is. A knife block works great for someone who is very busy, and who doesn't mind making dinner, but knows that in order to make it more enjoyable, they need to make the prep work run smoother. If they had more time, or if it were easier to prepare it, they would use fresh produce in every meal. A knife set is best for someone who doesn't have very much time to do research and wants to find a their new tools efficiently.

Why are so many people against knife blocks then?

If you've asked around about buying a knife set, you probably were told - don't do it! Why is that? Well, most knife experts are severe knife enthusiasts. In most cases they are knife collectors. They know all about steel types and edge geometry and patinas and forging techniques and, well, everything you could possibly know about a knife. While this is all very useful information, it is much more than even the greatest chef bothers to know.

These knife experts have sampled hundreds of knives, and they all have very set opinions on what the best knife in each category of knives is. Someone with the time to read hundreds of reviews of each type of knife that they'll need will have a non-matching set of the best knives in the world. If you don't have much time though, and if you want your knives to match, it's really in your best interest to purchase a set.

The other argument that most knife experts make is that sets are loaded with "filler knives that you'll never use," or that "all you ever need is a chef knife." I'm going to say it once and for all. Yes, you can eek by with just a chef knife, and yes, you will use your chef knife more than any other knife that you have. But try to use your chef knife to carve a pumpkin, remove the scales from a fish, or slice a loaf of freshly baked Italian bread and you will see that while you don't do those jobs very often, when you do them you want the proper knife for the job. It's like your stand mixer. While the paddle attachment gets 95% of the action, you still need the whisk attachment for whipped cream and the dough hook for dough.

How to choose your knife set?

The chef knife will be getting the most usage, so you will want to select your set predominantly on it. You can find streams and streams of information on choosing a chef knife, but here's what's most important - the handle must fit comfortably in your hands, and the blade should be made of decent steel. How can you tell about the steel? The simplest answer is that if it is a well-known company than they probably use decent steel. If you really want a valuable opinion, call the professional who you will have sharpen your knives and ask for a recommendation. If you plan to purchase online and won't be able to go in store and hold the knives in your hand, look for a handle that seems ergonomic and has no hard corners, which may cause calluses.

Second in line is the appearance of the set. Now I'm not being vain, but really, being able to display your knives in a beautiful block right out on the counter top adds a real touch of prowess to any kitchen. So chose a set that you'll be proud to have out on display. You'll most likely see it everyday, so be sure that it goes well with the appearance of the kitchen and that you feel glad to see it in your home.

Finally, you will also want to consider the other knives that are in the set. Why isn't this first on the list? There are no "useless" knives. What's most important when it comes to the knives in your block is knowing what tasks to use them for. Chances are if it's in your block it has a special purpose and it is worth if for you to take some time and find out how to use it. Ask a salesperson, a chef friend, or do a quick search online for each knife in your set and how it should be used. This will save you hours of frustration in kitchen, trying to use a santoku to debone a fish. If you knife set does not include a honing/sharpening steel you will need to purchase one and learn how to use it in order to maintain your knives. Your steel will not need to be stored in any special way, but if it is not included in your set you must consider this as an added expense.

How to maintain your set?

A knife set should be cared for specially in only two ways. Always insert completely dry, clean knives into the block to prevent bacteria from going inside, and whenever you are vacuuming, carefully remove the knives from your block and suck out any debris that may have fallen into the slots to prevent your knives from getting scratched or dented. Otherwise, maintain each knife as it normally should be. Hand wash your knives, only use them on wooden or rubber cutting boards, and use each knife for it's proper job. Your chef knife should be honed after each half-hour of use and should be sharpened professionally at least once or twice per year.

How to Choose a Knife Block For Style and Safety

Improperly stored knives become damaged and dull more quickly. Using a knife block to store them not only protects them, but is also safer than placing them in a drawer. Cuts can occur when you are trying to find a knife entangled with other items. Drawers are also easier for young children to reach. With blocks, you can find models that have locks to prevent children from removing the knives. With so many styles and colors on the market, you should be able to easily find a style to complement your kitchen.

Knife Block

You will often find bamboo included in categories labeled as wood. While not technically made of wood, bamboo is actually very durable. These are traditionally pale in color. Hardwoods, such as maple, oak, or cherry, are also used for blocks. Stains can vary, but typically maple and oak are chosen for lighter finishes, while walnut and cherry are used for dark ones. Beech and pine is also used in some economical models, but these are less desirable since they can warp much more easily.

These styles place knives even further out of reach of young children. Most styles are wood, but there are also magnetic and plastic styles available.

Locks keep the knives safely out of the hands of children. Most of them work on the premise that two separate elements must be engaged to release the lock. Locking models of virtually every style of block can be found.

Improper storage will result in knives that need to be sharpened more frequently. They can also be nicked or scratched by other utensils. A knife block can prevent this. With the number of choices on the market, you will likely have little trouble locating a suitable one.
